My family does not suffer from allergies but I have many friends and relatives that do. In purchasing this book I was seeking good-tasting treats that I could prepare without worry of those with dairy, egg or nut allergies. I now think about possible allergy issues every time I bake and consider my ingredients carefully depending upon where my baked goods are headed (school, bake sale, party, etc.)
I’ll admit that I was initially a little intimidated to bake without butter, eggs or nuts but I have learned that it is actually easier as her ingredients are more easily on hand and I don’t have to be as concerned with shelf-life. I am an avid baker and consider myself an experienced cook. Her use of simple, readily available yet high quality ingredients is evident throughout her cookbook. Her recipes have never failed me. It is obvious that she has developed each one through careful experimentation until she got it right! Speaking as someone who always tweaks a recipe to my liking – I will admit to never changing one of hers. They are so carefully thought out, well tested and very easy to prepare – even with little ones underfoot (or with their fingers in the dough – safe to eat since it’s egg-free!). I love Kelly’s blog and her recipes have never failed me! I received this book as a birthday gift and now I have all her recipes in one place! No one will ever know that these recipes are missing eggs, dairy and nuts. Unlike some other food allergy recipes I have tried, all of these actually work and taste great! Wow! I had begun to believe that my egg and dairy-allergic son would just have to tough it out and forego eating baked goods. This book is a Godsend. Thanks to Kelly Rudnicki’s delicious and simple recipes, he can now enjoy muffins, pancakes, cookies, cakes, breads, and more. I have purchased specialty cupcakes from dedicated bakeries that have cost as much as this book, and weren’t as good as Kelly’s. I am thrilled with this purchase. Just to see my son’s face light up as he leafed through the pages was worth it. He kept asking, “Can I eat this? Can I eat these too?” as he looked at the photos. After years of saying “No,” what a joy to be able to say, “Yes!!!”
